You had me at Dough

Let me start out by saying that I might not be the most unbiased tester. I love sweets and especially cookies. So when Skratch Labs came out with their cookie mix of course I wanted to try it. I bought three boxes to try several different “mix-in” combinations.

You can tell right away when you open the mix that it is different from your Betty Crocker type cookie mix. You see the oats and can smell the freshness of the ingredients. For my first batch of cookies I went ahead and mixed the dough before adding in the mix ins because I wanted to see what the dough tasted like by itself. Well, Skratch Labs, you had me at dough. The dough on it’s own tastes so great and fresh and healthy…you could easily eat all the dough and never have any cookies for your ride.

The recipe is easy enough…you just add 1 stick of room temperature butter, 1 egg and 1 cup of mix-ins to the Skratch mixture. Best results for me were when I threw them all in my kitchen aid mixer with the paddle beater (not whisk or dough) attachment and had it do the stirring.

My three batches were…

1. dried cherries and chopped almonds
2. blueberries and peanut butter powder
3. peanut butter chips and semi-sweet chocolate chips

Just fair warning, the dough is very sweet on its own so much so I even contemplated trying some savory flavors (was dreaming about cheese and bacon) but decided to let that be a future adventure.

I made them in mini muffin tins so they ended up being the size of a two bite brownie. I do with this with many of the portables from the Skratch Labs cook books. Helps me to better handle them on the bike and gives some built in portion control.

The juice of the blueberries did make the batter a bit runnier and actually made those cookies turn out more muffin like, but they were good. In fact they may have been my favorite. A close second was the dried cherries and chopped almonds. Taking third place was the peanut butter chips and semi-sweet chocolate chips. Rankings aside, they were all winners!
